Culinary Arts

Career Opportunities:
Job placement provided upon successful completion. Careers are available at restaurants, hotels, schools, bakeries, supermarkets, corporate dining rooms, catering, food manufacturers and distributors, resorts, cruise ships, and country clubs.

First Monday of every month.  Must first complete entry requirements (see below).

Length of Training:
12 weeks with 90% of the program spent learning hands-on in a real operational commercial kitchen.

Days/Time:
Monday through Friday, 8:30 a.m. to 3:00 p.m.
Students must maintain a 95% attendance rate.

Entry Requirements:
JobTrain Orientation, WONDERLIC assessment, and Life Skills Workshop with Culinary Arts math. Must have good attitude, be willing to work hard and study unsupervised at times, be able to lift 35 lbs., and stand for three to four hours continuously.  Be prepared to learn all the stations of a crowded kitchen.  Must be available to attend class every day, and be drug and alcohol free.

Skills to be attained:
Food preparation, knife safety and techniques, food safety and sanitation, opening and closing a commercial kitchen, kitchen safety, commercial dishwashing, gourmet pizza making, soups, salads, gourmet sandwiches, bread and dessert making, catering, nutrition, food garnishing and presentation, how to get and keep a job in the food service industry.

Management Fundamentals:
Point of sales computer systems, inventory costs and holding costs, expediting, minimizing food wastage, being supervised, and supervising others.

About the instructor:
Chef Instructor Adam Weiner is a fully credentialed vocational arts instructor and is a member of the American Culinary Federation and the Chef's Association of the Pacific Coast. He writes monthly articles for the chef's magazine, The Culinarian, and is a culinary trainer for the U.S. Navy.
